As seen with Château La Dominique 2023, it exhibited an unexpected concentration and managed to introduce a “saltiness” at the finish that is not typical of its terroir. The fragrance of violets and irises is light and pleasant, and swirling the glass releases enticing aromas of raspberries, strawberries, and red cherries. The wine’s body is as soft as freshly melted milky cheese, and in a fleeting moment, the palate is enveloped by the spicy and numbing textures of licorice, star anise, and Sichuan pepper. If a waltz were to play now, I would wish to dance until dawn.

Always using sustainable agriculture, the Château's 29 ha vineyard benefits from an exceptional terroir combining clay-gravelly, clay-limestone and sandy-on-clay soils. The vines are 30 years old on average.
Manual harvest in crates. Vinification in thermoregulated truncated conical vats. Aging lasts 14 months (50% in new barrels, 40% in wine barrels and 10% in vegetable polymer eggs, in amphora and in wine globe).
