Pale pink with pearlescent highlights, reflecting a measured extraction and a focus on finesse rather than concentration.
Crisp and elegant, dominated by citrus fruits (grapefruit, lemon) and white-fleshed fruit (pear, flat peach), complemented by delicate floral notes (orange blossom, hawthorn), followed by hints of damp stone, chalk and sea air.
The initial sensation is full-bodied, rich, textured and enveloping. The mid-palate then becomes fresher, leaving a hint of acidity on the finish.
Aperitifs, tapas, fish tartare, seafood, baked fish, grilled vegetables, ratatouille, chicken breast, vegetable or white meat curries, sashimi, sushi.
Serving temperature: 7 - 9 °C
This wine is made from grapes grown on clay-limestone soils, interspersed with marl, on the northern slopes of Provence.
Grapes harvested at night, destemmed, then directly pressed (rosé from free-run juice) using gentle pressure (pneumatic press). Settling at low temperature and maceration at between 14° and 18° C. Matured in stainless steel on fine lees for several weeks.
