What if you tasted the stars?
This stellar red wine is made from grape varieties invented in Switzerland, harvested late and vinified in barrels, of which only the very best are selected by Jean-François Crausaz and his team. With its heady aromas of wild berries and spices, and a palate of pure velvet and restrained power, this exceptional cuvée had to be named after the brightest star in the constellation Monoceros, the symbol of Maison Bolle. A great wine for special occasions... or not: only pleasure matters!

Nose

A subtle and complex bouquet that unfolds gradually. As a prelude, a stroll through the undergrowth, wild berries, then spices... a hint of juniper, fresh wood and blond tobacco.

Wine-growing terroir

Bolle & Cie owns and leases vineyards in the Côte region, notably in Luins and Vufflens-le-Château. Based on experience, the vineyard and cellar teams know that late harvests are exceptionally successful at the Domaine de Sarraux-Dessous in Begnins. They consistently produce the premium La Licorne wines on this terroir. Therefore, they naturally selected a portion of the grapes from this site for the creation of their new MONOCEROS cuvée.

Winemaking

The winemaking process is carried out with meticulous care in the cellars of Château de Vufflens and Domaine du Plessis. The final creation of MONOCEROS is the result of a day of painstaking tasting, where vineyard managers, cellar masters, and master winemakers use their discerning palates to perfect this exceptional wine.
