This tribute cuvée doesn't do things by halves! It's a great red wine, both subtle and intense, with aromas of black cherry and plum, and delicate notes of chocolate, vanilla and caramel from the very long barrel ageing. The palate is full-bodied and round, with good concentration and a silky tannic structure. A harmonious blend from two plots of Merlot and two others of Cornalin, with low yields and high quality. Awe-inspiring!

Deep red with ruby reflections.
Subtle and intense, with fruity, spicy and roasted scents. Aromas of black cherry, typical of Cornalin, supported by the pepperiness of Merlot. Aging in barrels brings delicate notes of chocolate, vanilla and caramel.
Ample, lively and round, with a silky tannin structure and beautiful concentration, this vintage ends with a long finish.
Fillet of Hérens beef with morel sauce, medallions of venison with gènepi, rack of deer with chestnuts, chamois stew with Cornalin, roast veal with “crève-à-fous” or for it alone to make one moment of meditation.
Serving temperature: 15 - 17°C
The wine comes from the vines of four plots: the Merlot is planted in the communes of Conthey and Chamoson, while the Cornalin comes from Sierre and Fully. It took several years dedicated to pruning the vines and developing the environment before obtaining the desired low yields. This nectar, pure and concentrated, fully satisfies Maurice Gay's oenologists with its extraordinary fullness.
After a hot pre-fermentation maceration, followed by traditional vinification, the nectar was refined in 228 liter Burgundian barrels for no less than 20 months.
