The Domaine de Sarraux-Dessous is located on 18 hectares in one piece - facing south, south-east - in the best part of the hillside. The vineyard is topped by a tall, rustic house housing the cellars. The estate's wines are housed and aged in oak barrels until they are bottled.
The vatting of Gamay, richly endowed with fruit and tannins, lasts 8 to 10 days in vats, with daily pumping over. Once pressed, thanks to aging in oak barrels, it benefits from weak but constant aeration through the walls of the wood, promoting harmonious homogeneity.
