Different soil profiles (limestone, sandy limestone and gravelly stony) at altitudes between 1350 and 1580 m, offering significant thermal amplitudes. This diversity of soils and microclimates makes it possible to develop a range of wines of character which reflect and respect the different terroirs.
A five-day cold maceration precedes fermentation, which begins at controlled temperatures between 10°C and 12°C. During this stage, regular pumping over two to three times a day is carried out to ensure optimal extraction of aromatic and taste compounds.

Alta Yari
The ambition is to make Alta Yarí one of the most exceptional areas in Argentina. After leaving Bordeaux almost 40 years ago, Hervé Fabre has had the privilege of working with many exceptional terroirs in Argentina, but the Alta Yarí estate in Gualtallary is in his opinion one of the best.
