Voyage en terres helvétiques : Domaine de Autecour

Located in the heart of the wine village of Mont-sur-Rolle, the Domaine de Autecour celebrated its 2013
350 years of existence. The building, listed as a historical monument, is a witness to its rich history. The
vines, planted in high density, give rise to vintages aged in the estate's cellars.
Among them, the Chasselas Premier Grand Cru has become a true emblem of the Canton of Vaud.

Michaël Monnier is from Arnex-sur-Orbe, in the North of Vaud. This former butcher developed a passion for vines and took over the Domaine de Autecour in November 2012. He enjoys fishing, skiing and good food… see below!

The estate takes its name from the old French "altacort", which means "upper farm". The manor house, listed as a historic monument, dates from 1663, built by a
Bernese nobleman.

The Chasselas from Domaine de Autecour has been elected the Council's wine of honor several times.
Vaud State! It is one of the rare wines raised to the rank of Premier Grand Cru, and this from the first vintage of this new category at the top of Vaud wines.

Tartar
Arctic char from Lake Geneva with citrus fruits (for 4 people)

350g of skinless Arctic char fillets, cut with a knife, but not too thin, to give it a bit of chewiness!

And assemble with:

15ml of mullet eggs

15ml finely chopped shallot

15ml chopped chives

15ml olive oil

5ml finely grated orange zest

5ml finely grated lemon zest

10ml lemon juice

2.5ml of Sambal Oelek

Salt
