All grape varieties are cultivated in spurred cordons, at a density of 6,000 strains per ha, using the environmentally friendly Bokashi method. This biological technique ensures the supply of a wide variety of microorganisms and nutrients. Proximity to the sea and exposure to the sun give the wines minerality and acidity, characteristics of the terroir from which they come.
Fermentation for 25 days at a temperature between 26-28°C with native yeasts. Spontaneous malolactic fermentation. Aging for 6 months in cement vats and 3 months in bottle.
