In the territory of the Rueda appellation, gray-brown soils predominate, poor in organic matter, stony and easy to plow. This composition allows good ventilation and drainage of the layers. The land is rich in calcium and magnesium essential for the proper development of life.
Mechanical harvesting takes place at night to protect the grapes from any oxidation. To obtain fruity aromas and a very clear juice, fermentation for 18 to 20 days in stainless steel vats at low temperature is carried out, then the wine is filtered and cold stabilized.
