The vineyard is rooted in the foothills of the Massif Central with breathtaking views of the Pyrenees and the Mediterranean Sea. This patchwork of climates and terroirs is the secret of Ô: the grapes ripen slowly in perfect weather conditions and produce a fresh and elegantly balanced wine.
Harvest at daybreak when night temperatures still cool the soil, grains and foliage. The grapes are then very gently pressed. Only juices obtained by bleeding are selected to preserve the shine and luminosity of the natural colors of the juice.
