Delicate on the palate, meticulous to the touch, with brightness in the fruit, the wine glides all along the palate, long, sappy and distinguished between its taste and its tannic support. Blend: 90% Merlot, 10% Cabernet Franc. Alcohol content: 14°5. pH: 3.6.

This is a fairly different blend than you would find in Carillon a few years ago, when there was more Cabernet Franc. Now, with new plots, you can expect it to be more Merlot-focused going forward, setting it clearly apart from the main estate wine. Yields around 40hl/ha. 3.5pH, 60% new oak. 89 100Yves BeckBouquet marked by wood with vanilla and licorice wood. On the palate the wine is delicious and charming. The woodiness is also present on the palate but the fruit manages to find its way among the aging. (89-90/100)

Very aromatic, fruity, subtle and spicy. Notes of vanilla and licorice.
Fried, bright, fruity. Good tannic structure.
Grilled meats, wild boar, chicken with green pepper, turkey with chestnuts, pigeon with olives, cod brandade, Brie de Meaux, Cantal.
Serving temperature: 16 - 18°C
The vineyard extends at the foot of the south coast. This amphitheater of vines, flooded with sunlight, emerges in its upper part from what is locally called the "Mediterranean belt" of Saint-Émilion, a warm strip where certain southern species grow. The soils are mainly clay-limestone on the upper part and sandy-clay-limestone at the foot of the hill.
Long vatting in thermoregulated stainless steel and cement vats, malolactic fermentation and aging in oak barrels.
