For this Licorne Blanche cuvée, each grape variety was vinified separately and blended before bottling. Barrel aging for Chardonnay, with the aim of highlighting the structure, aromatic potential and creaminess of this grape variety. The Pinot blanc brings roundness. The Pinot gris contributes to the complexity and creaminess. Doral, made from a cross between Chasselas and Chardonnay, lends finesse, balance and fruitiness to the blend. The Chasselas, for its part, plays the role of a link.
