Take 4/5 Marsanne and 1/5 Roussanne. Of the highest quality of course. Vinify them separately, part in vats and the rest in barrels. Stir a little to bring richness. Finally, after about ten months, blend your two flagship Rhône grape varieties. It's ready! You now have a superb white wine, with aromas of apricot and citrus, white flowers and almond. On the palate, it is both rich and elegant, with a lovely freshness. Let's eat!

Roussanne - 2 - 4 years

Pale yellow dress with brilliant reflections.
Superb, very subtle aromatic bouquet with slightly lemony apricot notes, underlined by aromas of white flowers, almond and honey.
Very elegant on the palate, it prolongs these magnificent fruity aromas, with finesse and a lovely freshness which brings a nice balance.
Veal sweetbreads with morel sauce, Armorican monkfish.

The vines are planted on four separate plots located in the communes of Mercurol and Larnage. The soil of Mercurol is clay-limestone, deep with few rolled pebbles. The lands of Larnage are distinguished by their soil composed of granite and kaolin from the last foothills of the Massif Central. Most of the vines on these 4 plots are nearly 25 years old and are worked according to ecological principles that respect biodiversity.
After hand-picking, Roussanne and Marsanne are vinified separately and then blended at the end of the aging process. After a night of settling, a quarter of the harvest is vinified in stainless steel vats while the rest is vinified in 400L barrels. A few regular stirrings allow the wine to obtain fat and flesh. The wine is then blended and bottled after 10 months of aging.
