Have you heard of Räuschling? This ancient German grape variety is now found only in Switzerland, particularly around Lake Zurich, where it has become emblematic of the region. Its name, from the verb rauschen, refers to the rustling of the wind through its foliage. Very lively, with citrus notes, this light white wine is ideal with puff pastries or a shrimp cocktail.
