Go and discover the whites of Châteauneuf-du-Pape, they are bombs! Made from lesser-known grape varieties like Clairette or Bourboulenc, they are powerful, even impressive. A beautiful pale yellow, with lime highlights.
Powerful and complex, with aromas of small white flowers, vine peach and marshmallow, all enhanced by a nice touch of minerality.
The mouth is full and fresh. We find the aromatic register of the nose, with a long finish with notes of citrus zest and minerality. This vintage combines elegance and complexity.
Aperitif, tapas, hors d'oeuvres, seafood, sea fish, grilled vegetables, grilled or baked white meats, cheeses.

The vineyard of Domaine du Père Caboche is covered with rolled pebbles. The 4 main terroirs of the appellation are represented (limestone soils, rolled pebbles, sandstone/clay, sand) the most important being the famous Crau plateau.
Manual harvest, pressing upon arrival at the cellar, fermentation at low temperature (between 16 and 18°C) in stainless steel vats, no malolactic fermentation. Aging on lees with regular stirring to best develop the fat of the wine.

In the past, we were farriers and winegrowers from father to son at the Boisson family. The family was also nicknamed "caboche", a term which designates the nails fixing the shoes under the horses' hooves, which gave its name to the estate, today managed by Émilie Boisson.
