Great freshness, very pure, lively, refined and complex. With aromas of citrus zest and white-fleshed fruits, ripe but not excessive, such as vine peach and floral nuances of hawthorn, linden and acacia, racy and seductive, it reveals mineral and saline, quartz, gunflint, the signature of our gravelly soils.
Juicy and dense, suave, silky and very delicate. The superb acid tension perfectly structures this wine and gives it great freshness. The purity of the aromas brings out a finish of great elegance. Impeccable balance in classic style.
Tapas, antipasti, seafood platters and salads, grilled fish, chicken blanquette, baked poultry, expressive hard cheeses.

The Chevalier terroir, with its poor and complex soils, owes its characteristics to the forest that surrounds it. This environment creates a greenhouse effect during hot periods, favoring the ripening of the grapes and increases the risk of frost during cold periods.
Slow pressing, settling and alcoholic fermentation in barrels, aging on lees in barrels with stirring for 18 months (including 35% new wood).
