In 1865, Alphonse Bolle bought a wine business in Morges. This marked the beginning of a wonderful adventure, celebrated 160 years later with this special vintage, created with Maison Mauler, a renowned sparkling wine company based in Môtiers. It's also a nod to Alphonse, who had left Val de Travers to settle in Morges. This Pinot Noir Brut, with notes of candied orange and baked apples, will perfectly complement any meal, from starter to dessert!

This vintage is a delightful accompaniment to any meal, from starter to dessert!
We imagine it with petits fours as an aperitif, we suggest it alongside a lobster bisque, bacon-covered scallops, or even a trout from our rivers as a main course. It will be very stylish with a mature cheese and quite delicious as an escort to a strawberry dessert for a delicate finale. What's more, it won't be necessary to ask twice to extend the evening!

This sparkling wine was produced using the Traditional Method. This meticulous winemaking process involves refermenting the wine once bottled to trap airy bubbles in the bottle, guaranteeing a subtle, sparkling mouthfeel.
The Alphonse cuvée then spends seven years in the heart of the Prieuré Saint-Pierre cellars. During this forced rest, the fine lees settle and patiently degrade, giving the wine a velvety texture and striking complexity.
