This little sweetness from Clos du Rocher comes from a little-known Swiss grape variety, a cross between Chasselas and Chardonnay: Doral. Harvested in December, this sweet wine then rested for another 3 years in new barrels. The result is very complex: vanilla, tonka beans, citrus fruits, exotic fruits. On the palate, the remarkable acidity and salinity make this nectar airy, very long, very fine!

Intense and sparkling golden yellow.
Fine, elegant, expressive and of prodigious complexity, where notes of vanilla, coconut and tonka bean blend wonderfully with those of grapefruit, candied lemon, orange and pineapple.
Soft, concentrated and with invigorating acidity, with a finish of superb salinity and long persistence. A great terroir wine.
Foie gras, fish, asparagus, clams with artichokes, poultry, Asian cuisine, cheeses with nuts, tarte tatin, crème caramel, pineapple carpaccio.
Located in Yvorne, one of the largest wine-growing municipalities in the Canton of Vaud, Clos du Rocher benefits from an exceptional terroir. Nestled against the rock face, the vines face due south on one of the steepest slopes in the region, in stony, well-drained soil. The warm Föhn winds help prevent disease, while in the evening and at night, temperatures drop, maintaining balance in the grapes.
The grapes for this Doral were harvested in December after concentrating sugar and aromas on the stems (passerillé). After gentle pressing, the wine was put into barrels for alcoholic fermentation. Once this was completed, aging for 3 years in new barrels brought this great wine to its peak.

Clos du Rocher
Clos du Rocher was born in the 19th century, when vines and well-ordered walls replaced scrub and rock. The estate was acquired in 1918 by Emile Obrist, who immediately recognised the qualities of this terroir. He has proved it ever since, as this vineyard with its special aura has received praise from the profession, as much for its wines as for its winemakers!
