To obtain its Bianco di Merlot “Cherubino”, the Matasci winery selects grapes from carefully chosen vineyards and immediately separates the skins from the juice once the bunches are pressed. Color is only in the skin, not in the flesh. This is how you make white with Merlot! A style of fine, delicate white wine, and an original way of working Merlot, the emblematic grape variety of Ticino!
