99 100Yves BeckDans une logique de subtilité, de finesse et de perfection, le bouquet de Carmes pose les jalons d’entrée ! Il faut dire qu’il précède un vin qui brillait déjà durant les primeurs, donc le défi à relever est de taille. Outre l’aspect variétal du Bouchet (Iris, pivoines) il y a la fraîcheur des garrigues, des herbes séchées ainsi que des nuances de sureau. A l’image du bouquet, l’attaque annonce le vin avec un enthousiasme et une sérénité évidents. La fraîcheur, la puissance et le charme sont là, un peu de boisé aussi. Toujours à l’image du bouquet. Un véritable match-play entre nez et palais s’instaure. Pas au détriment du vin, bien au contraire. Ce dernier commence par nous rappeler, à sa manière, qu’il y a de grands vins en 2021. (comme il l’avait déjà fait en 2013, mais dans le cas du 2021, d’une manière encore plus concrète, plus aboutie.) Il assume les particularités du millésime ; les tannins sont serrés, mais pas durs et offrent une assise d’une grande fiabilité tout en assurant une touche suave. A l’aération le vin prend place, tous les éléments se posent d’une manière ordonnée, bien définie. On se surprend à rêver d’un peu plus de profondeur, car le vin éveille les vœux d’excellence, et puis l’on réalise, quand-même, que l’on savoure une des plus grandes réussites du millésime. Il a évidemment besoin d’un peu de garde afin de s’épanouir, mais les impatients éprouveront aussi du plaisir, car un grand vin, à l’image de celui-ci, est pratiquement toujours bon ! 2027-2060. 97 100Jean-Marc QuarinCouleur très sombre, aux reflets noirs et pourpre. Nez très aromatique, fin, fruité, pur, subtil et noble. Touche de gelée de mûres, de fruits noirs et de réglisse. Charnu dès l'attaque et immédiatement minutieux dans sa texture, le vin brille par son toucher et sa chair en milieu de bouche. Il fond au palais, juteux, nuancé, complexe, profond et noble, dans une superbe construction de laquelle ressort une sensation de sophistication, de pureté et de profondeur. Du grand vin fin. Assemblage : 40 % cabernet franc, 35 % cabernet sauvignon, 25 % merlot. Degré d’alcool : 13°5 naturel - pH : 3,60. Elevage : 70 % barriques neuves, 20 % foudres de 18 hl, 10 % amphore. 96 100DecanterBeautiful aromatic complexity on the nose, floral nuances and expressive blackcurrant, black cherry and dark chocolate but you're really getting the perfumed Cabernet fruit. This has an instant presence in the mouth, fully flavoured and juicy but so balanced, nothing sticking out, with the elegance of the ripe cool fruit touching the sides of the mouth. Tannins are present but fine and gently grippy with detail and definition to them. This has a lot of life for the vintage, one of the more full, round wines with chewy, fleshy tannins. The Cabernet gives backbone and density, the Merlot ripe red fruits, and then the chalky, slate, pencil lead, graphite salinity of the terroir comes in on the finish, giving that nuance, the sense of place and the vintage. Great rise and persistence all the way through, such drive but also lift, it doesn't let up. A stand-out wine - extremely classy and memorable. Skilled winemaking on show from Guillaume Pouthier. 5% more tannins than in 2020 which was already high. Grapes were picked at a natural alcohol of 14.2% so no chaptalisation here. 3.6pH. 45% whole bunches. Ageing in 70% new oak, 20% new foundre and 10% amphoras. Drinking window: 2027 - 2050. 95 100Robert Parker's Wine AdvocateThe 2021 Les Carmes Haut-Brion has turned out beautifully in bottle, though it is more introverted and brooding than it appeared during en primeur tastings, unwinding in the glass with aromas of dark berries mingled with spices, loamy soil, licorice, rose petals, gentian and black pepper. Medium to full-bodied, deep and seamless, with a concentrated core of fruit framed by ripe but abundant structuring tannins and bright acids, it concludes with a long, palate-staining finish. As readers may remember, it's a blend of 40% Cabernet Franc, 35% Cabernet Sauvignon and 25% Merlot. Drinking window: 2027 - 2055. Yohan Castaing. February 2024.

A beautiful dark and intense purple red, with almost black highlights.
Beautiful aromatic complexity, with nuances of blackcurrant, black cherry, blackberry jelly, dark chocolate and licorice, followed by floral notes and a slight touch of salinity and graphite.
Fleshy and meticulous first impression, this wine shines with its texture and body in the mid-palate, melting in the mouth, juicy, nuanced, complex, deep and noble in its superb structure. A sophisticated, pure and deep wine.
Cold cuts, meat and game terrine, stuffed turkey, oven roast, T-bone steak, Café de Paris rib steak, leg of lamb, royal couscous, saddle of venison, soft cheese, dark chocolate fondant.

The ten hectares of land are divided between gravel, clay and sand. It was the affinities of the soil that guided the choice of grape varieties. Cabernet Franc (39%) and Cabernet Sauvignon (20%) are grown, with Merlot (41%) further away. This mosaic of vegetation is the basis for the estate's unusual profile.
Hand-picked grapes, vatting for 35 days, aging in oak barrels (70% new wood, 20% casks and 10% in terracotta jars) for 24 months.
