Cette pluralité et cette profondeur sont le résultat d’une recherche de perfection, à l’affut de la complexité que le terroir est en mesure de conférer, mais encore faut-il le dompter ! Je pense que c’est chose faite, surtout après avoir pris le vin en bouche. En effet, la grandeur annoncée par le bouquet est complètement assumée par le palais. Le vin a de la densité, des tannins serrés et une structure acide qui véhicule parfaitement l’intensité aromatique jusqu’en finale. On rappellera, pour la forme, qu’un grand vin se caractérise par son aptitude à performer sur des millésimes plus compliqués… Mission accomplie ! Un vin qu’il faut avoir en cave… 2026-2046. Délicat en entrée de bouche, très aromatique au milieu, le vin caresse le palais et va ascendant en finale, subtilement tramé. Belle longueur à la tannicité nuancée et parfumée. Ensemble raffiné et très bon. Assemblage : 58 % merlot, 42 % cabernet franc. Degré d'alcool : 13°7 - pH : 3,3. A dark, deep purple with almost black highlights.
Cold cuts, game terrine, Périgord salad, boletus risotto, turkey stuffed with olives, Charolais entrecôte, grilled meat, lamb rack, wild boar stew, venison saddle, semi-hard cheeses, dark chocolate.
Serving temperature: 16 - 18 ° C
The estate now covers 38 ha, including 22 ha of Premier Grand Cru Classé. The plots are located in three areas: on a plateau of limestone and green marl at around 90 metres above sea level; on the south-southwest-facing slope on clayey molasses from Frondais; and at the foot of the slope, consisting of deep sand deposited by colluvial processes.
Manual harvest in small crates, overnight in a cold room, mechanical destemming, optical sorting. Plot vinification in thermoregulated stainless steel vats, filled by gravity, without the use of sulfur. Alcoholic fermentation with pumping over and punching down, malolactic fermentation in vats (75%) and barrels (25%). Maceration for approximately 30 days. Aging for 14 to 16 months, separated by batch in oak barrels (60% new wood).
