The terroir of Barsac, particularly at Château Coutet, is clayey-limestone, hence water retention. Cold soils slow down the ripening of grapes.
Manual harvest between September and November, picking only botrytized grapes, slow pressing of the grapes, alcoholic fermentation in batches in barrels, aging for 18 months before final blending of the vintage.

Château Coutet
Château Coutet was recognized as a Premier Grand Cru Classé in 1855. On the lands of Barsac, which are the coldest in the appellation, the vines had already been planted centuries before. The great history of Sauternes and Barsac has been perpetuated since 1977 with the Baly family, which produces a rich, lively wine, with aromas of white flowers, citrus fruits, honey and vanilla from the very beginning of its evolution.
