Délicatesse du toucher de bouche avec une belle liqueur pour un Climens plus tendu que d’habitude et qui pourtant ne manque pas de puissance. Très beaux amers finaux. Finale aérienne et fraîche. 19 100Terre de VinsUn grand Climens qui doit être attendu. Le nez est dense et complexe, profond, révélant des nuances florales et d’herbes fleuries. La bouche très nette est ronde, précise, mais doit toutefois encore s’épanouir. La finale persistante mêle agrumes, fruits secs, abricot. Le vin se montre exceptionnel dans son équilibre, sa précision, la balance qu’il offre entre énergie et finesse, puissance et élégance. Burnished gold hue, botrytis notes on the nose, some leafy, spicy, lemongrass hints and a palate with just the right balance between lusciousness and freshness. Extremely subtle oak. Beautiful pale lemon-gold.
Aromas of ripe peach, mango and musk melon, with a hint of cedar, orange blossom, candied ginger and freshly baked bread.
Explosive on the palate with vibrant, energetic notes of stone fruit and tropical fruit, followed by a fantastic freshness and a long, creamy finish.
Pan-fried foie gras with apples, veal escalopes with Roquefort, filet mignon with Roquefort, blue cheese, pineapple carpaccio, caramelized pineapple, lost brioche.
The name Climens means “ungrateful land” in Frankish language! This was without counting on the vine, this prodigious plant capable of transforming despised soils into terroirs blessed by the gods. The 31 ha of vines are planted with 100% Sémillon, with an average age of 38 years. Strewn with pebbles, the red earth is made up of a thin layer of clayey sand, rich in iron, resting on a cracked limestone base which, combined with the steep exposure, promotes excellent natural drainage.
Manual harvest, carried out by experienced pickers, trained and supervised by Bérénice Lurton and her team. Fermentation with natural yeasts in small batches in French oak barrels (30 to 40% renewed each year). Aging for 20 to 22 months in barrels on fine lees (one third new wood).
