The palate displays exquisite balance, a sense of controlled power the Climens carries off so well. A touch of clear honey, acacia, peach, a little quince. Very long and supremely well focused. 94 100Jean-Marc QuarinTrès belle couleur, jaune-vert, aux reflets gris. Nez intense, fin, fruité et mûr. La bouche se distingue par son caractère dense, crémeux, fruité et très aromatique. Le vin se développe particulièrement savoureux et complexe en seconde partie du palais. Il s'achève puissant, fondant sur une très grande longueur. Je le juge moins bon que 2003.

With scents of citrus, plum, apricot and apple, supported by saffron and licorice notes.
It is characterised above all by its freshness, by its complex aromatic expression, by the precision of its balance between sweetness, acidity and bitterness, and finally by its unique mouthfeel.
Pan-fried foie gras with apples, veal escalopes with Roquefort, filet mignon with Roquefort, blue cheese, pineapple carpaccio, caramelized pineapple, lost brioche.
The name Climens means “ungrateful land” in Frankish language! This was without counting on the vine, this prodigious plant capable of transforming despised soils into terroirs blessed by the gods. The 31 ha of vines are planted with 100% Sémillon, with an average age of 38 years. Strewn with pebbles, the red earth is made up of a thin layer of clayey sand, rich in iron, resting on a cracked limestone base which, combined with the steep exposure, promotes excellent natural drainage.
Manual harvest, carried out by experienced pickers, trained and supervised by Bérénice Lurton and her team. Fermentation with natural yeasts in small batches in French oak barrels (30 to 40% renewed each year). Aging for 20 to 22 months in barrels on fine lees (one third new wood).
