Au palais le côté gras donne de l’ampleur. La structure acide soutient bien l’ensemble des éléments, expression aromatique filigrane, note de thé vert en fin de bouche. Un vin en forme. Réglissé. Attaque nette et douce, se développant sur un toucher de bouche fin et une structure liquoreuse mais d'une grande douceur. Le vin présente un très bel équilibre dans sa densité et termine sur des notes grillées de bois neuf. Vin puissant, assez entier, que le temps doit patiner encore plus. Gouté en juin 2000.

Beautiful golden yellow with a slight amber hue.
A complex and pleasantly fresh bouquet, revealing notes of peach, green tea and saffron.
Velvety on the palate, with richness conferring it complexity. The acidity supports all the elements well, with delicate aromatic expression and a finish with a hint of green tea.
Pan-fried foie gras with apples, veal escalopes with Roquefort, filet mignon with Roquefort, blue cheese, pineapple carpaccio, caramelized pineapple, lost brioche.
The name Climens means “ungrateful land” in Frankish language! This was without counting on the vine, this prodigious plant capable of transforming despised soils into terroirs blessed by the gods. The 31 ha of vines are planted with 100% Sémillon, with an average age of 38 years. Strewn with pebbles, the red earth is made up of a thin layer of clayey sand, rich in iron, resting on a cracked limestone base which, combined with the steep exposure, promotes excellent natural drainage.
Manual harvest, carried out by experienced pickers, trained and supervised by Bérénice Lurton and her team. Fermentation with natural yeasts in small batches in French oak barrels (30 to 40% renewed each year). Aging for 20 to 22 months in barrels on fine lees (one third new wood).
