The palate is soft and supple on the entry with light tannin, a touch of mocha tinging the red and black fruit, leading to a structured finish that is simple but lingers in satisfying fashion. Château Canon La Gaffelière is located near the medieval town of Saint-Émilion, near the reverside. Over an area of 19.5 ha, the clay-limestone and clay-sandy soils constitute a complex and nevertheless exceptional terroir.
Manual harvest, vatting for 30 days in temperature-controlled wooden vats, aging for 15 months on fine lees in oak barrels, 55% of which are new.
