Venison carpaccio, beef stroganoff, wild boar stew, Irish stew, bami goreng, mature cheeses, gorgonzola, stilton.
Serving temperature: 16 - 18°C
The vineyards of Castello di Fonterutoli are based on a unique soil, made up of the decomposition of Alberese and sandstone, dominated by limestone, which gives the vineyards a mineral and complex core. The soils of the Belguardo vineyards, consisting mainly of very fine gravel from the decomposition of sandstone and a clay-limestone mixture known as alberese, confirm the maxim that poor soils produce great wines.
Manual harvest, vatting between 13 and 15 days, aging for 18 months in French and American oak barrels (30% new wood).
