Too good for the sheep!
This white wine offers a fruity nose, with citrus notes combined with nuances of white peach and papaya. On the palate it displays a beautiful presence, while remaining very refreshing. Ideal with fatty fish, and expressive hard cheeses like… Pecorino! Logic for this sheep's milk cheese whose name means "little sheep". A name which also designates the grape variety at the origin of this wine, because its grape was the favorite delicacy of the sheep led to the pastures at lower altitude.

A beautiful bright and luminous yellow, with lime highlights.
Fruity bouquet, with citrus notes coated with an exotic touch with nuances of white peach and papaya.
Full, long and very refreshing with a slightly balsamic finish, medium acidity and good structure.
From vines on deep, finely structured, alkaline and very calcareous soils.
Manual harvest. The whole grapes are cooled upon arrival in the cellar. Immediate drop in temperature and cold maceration. Destemming, gentle crushing. Static Decantering at 14°C for 24 to 48 hours. Fermentation in stainless steel vats at controlled temperature. Aging in vats for 3 months before bottling.
