Château Pas du Cerf: An exceptional wine estate in Provence?

“In 2000, the parents suggested that their three daughters, Aurore, Diane and Marion, work together to create their own wines. The estate was previously part of a cooperative and did not produce its own wines” Laurence Gailliard tells us.
Diane then became production manager, responsible for viticulture and oenology. His rigor in the selection of grape varieties and his mastery of blending give rise to wines combining elegance and character.
Aurore, for her part, occupies the position of export manager, supported by Laurence Gailliard, who benefits from 25 years of experience in wine marketing. The wines are thus distributed beyond French borders, in Europe and Switzerland, in the United States and gradually in Asia.
Marion joins the adventure as a versatile pillar of the estate, helping with the vines, distribution and organization of events. Summer 2023 also promises a rich event program, including music concerts and activities within the vineyards.
The schist terroir, the south-facing slopes and the maritime influence create an environment conducive to the production of balanced wines, combining freshness and aromatic intensity. “The vines draw on the unique minerality of the soil and produce wines of rare elegance, expressing the typicity of La Londe” confirms Laurence.
This exceptional terroir has earned it the prestigious Côtes de Provence La Londe AOP appellation, thus recognizing the delicate imprint of the soil and the unique grain of the wines.
Nestled in the heart of a 700-hectare preserved forest, Château Pas du Cerf benefits from untouched nature. Grenache, Cinsault, Syrah, Tibouren, Carignan, Rolle, Mourvèdre, Cabernet Sauvignon, Sémillon, Clairette and Viognier, the estate's 11 Provençal grape varieties flourish within a flourishing biodiversity.
The Château is committed to a committed and transparent approach, from growing the vines to bottling. The estate holds the Level 3 High Environmental Value certification, and is certified in organic farming by the ECOCERT organization for the Diane Rosé vintage.
Château Pas du Cerf "Diane" Rosé is an organic rosé wine in the Côtes de Provence La Londe appellation. The vintage bears the name of the estate's oenologist, and also pays homage to the mythological goddess of the hunt.
This flagship vintage has a pale pink color with silver highlights, while its nose reveals delicate notes of redcurrant and raspberry. On the palate, its supple and silky texture is enhanced by a refreshing acidity. A wine that goes very well with summer dishes, such as a tomato, mozzarella and olive salad.
Château Pas du Cerf “Audace” Rosé, is a more complex and structured gastronomic wine. This resolutely atypical vintage expresses the audacity and creativity of the three women of Château Pas du Cerf.
With its salmon pink color, its intense aromas of exotic fruits, spices and its mineral notes, this wine offers a refined and harmonious taste experience, ideal to accompany Oriental or Asian cuisine.
