For a caprese salad or parmigiana: opt for a fresh white or rosé to balance the acidity of the tomato and the sweetness of the aubergine.
For courgette-garlic-lemon pasta: a Sauvignon de Loire or a light Pinot Noir will work wonders.
And with artichokes? A bright white, of course.
