Recipe: Mediterranean Citrus and Feta Sala
Ingredients:
✔ 1 romaine lettuce, washed and shredded
✔ 1 pink grapefruit, peeled and cut into slices
✔ 2 oranges, peeled and cut into fourths
✔ 1 avocado, peeled, pitted and sliced
✔ 100g feta cheese, crumbled
✔ 1⁄2 red onion, thinly sliced
✔ 1⁄4 cup fresh mint, chopped
✔ 1⁄4 cup toasted cashews, unsalted For the dressing:
✔ 3 tablespoons extra virgin olive oil
✔ 2 tablespoons fresh lemon juice
✔ 1 teaspoon honey
✔ Salt and freshly ground black pepper
Preparation:
➢ In a large bowl, mix the romaine lettuce, grapefruit slices, orange slices, avocado slices, chopped red onion and fresh mint.
➢ Prepare the vinaigrette by mixing the olive oil, lemon juice, honey, salt and pepper in a small bowl. Pour the dressing over the salad and stir gently to mix all the ingredients.
➢ Garnish the salad with crumbled feta and roasted cashew nuts.
➢ Serve immediately to keep the salad fresh and crisp.
